These protein pancakes were created by an original VFit Squad member, Tiffany, and a wonderful way to start any day. Full of healthy fat, protein and nutrients - they will fill you up and keep you away from the morning slump.
Combine all ingredients except oil and blend well in a blender or food processor.
In a pan heat oil over medium heat in a pan. Once oil is well heated (this is key), pour batter into pancake size scoops in pan. Flip once the pancakes start to bubble (approx. 2-3 minutes), and cook evenly on both sides. Make sure to check pancakes do not stick to pan.
